Bill Courtney

Bill Courtney has enjoyed calling St. Louis home since 1995. After being graduated from the University of Missouri - Columbia with a Bachelor of Science degree in Chemistry, Bill joined the staff of the Radiology Department at the Washington University School of Medicine, helping to develop radioactive compounds for imaging cancer with PET scanners. In 2000, Bill transferred to the The Genome Institute at Washington University. During his 9 years there, he worked with a team of over 100 scientists, including his wife Laura, to complete the sequence and map of the human genome as well as the DNA sequences of hundreds of other large and small organisms.

In late 2009, Bill decided to leave Washington University to start his own small business, not in the sciences, but in the culinary arts. Cheese-ology Macaroni & Cheese opened on the Delmar Loop in University City in the summer of 2010, and has quickly become a local landmark. Dishes from Cheese-ology have been featured in local and national publications, including Midwest Living Magazine, Southern Living Magazine and FoxNews.com. His restaurant has been named St. Louis' Favorite Place to eat Macaroni & Cheese for 3 years straight by readers of the Riverfront Times, the “Best of the Midwest” for two years by Midwest Living Magazine, and in 2014 was nominated by St. Louis Magazine as a finalist for the Best Kid-Friendly Restaurant in St. Louis. On the musical front, Bill has enjoyed playing the violin since childhood and while working on his Chemistry degree at the University of Missouri, continued his violin studies with Eva Szekely. Following graduation, Bill joined the Alton Symphony, and shortly thereafter, The St. Louis Philharmonic Orchestra, with which he still performs. For over 10 years, Bill served as the Principal Second violinist with the Webster University Symphony Orchestra, and now proudly holds the same position with The Metropolitan Orchestra of St. Louis.
